Is there anything better than staying home on a gray, cloudy day with the smell of soup cooking in the Crockpot? I think this is the best. Paired with some homemade bread and this meal was fantastic. Even the baby loved it.
Lentil Soup:
- 1 bag lentils
- 1 can diced tomatoes
- Onion
- Celery
- Carrot
- Veggie broth
- Seasonings as desired: salt, pepper, cumin, red pepper flakes
Wash and sort the lentils, set aside. Cook the veggies (I didn't put the measurements of vegetables because it's a preference. I used 2 stalks of celery, 1/2 onion and 2 carrots) in a pan with seasonings for 10 min. Transfer to Crockpot.
Add the lentils to the Crockpot and enough veggie broth to cover. Cook for approximately 6-8 hours. When all the vegetables are soft, take out half the soup and blend in a blender. Return to the Crockpot and keep warm.
